About the Chef
Chef, gastronomist and entrepreneur, Marco Carboni has been working in food since a very young age. He worked as a chef in various restaurants in London, Barcelona and Italy with Massimo Bottura and Gordon Ramsay amongst others.
After a few years in the kitchen, Marco dedicated himself to the cause of Slow Food, a worldwide grassroot movement that promotes sustainable eating, highlighting the work of small-scale producers. Marco is also a professional sommelier and artisan wine is one of his strongest passions.
In 2012 he starts in London with his Mexican girlfriend Carmen a supper club project called "I Love Your Hat!", featuring contemporary Italian food, with different themes inspired by seasonality, travels and art. Marco lives now in Mexico City where he is exploring new ideas for his next project.
Sartoria is his new gastronomic proposal that seeks to express the philosophy of cooking of his origins, based on the raw material, the season of food and the "handmade".
